Whole Chicken

A pasture-raised whole chicken for roasting, spatchcocking, or breaking down into parts. A good whole chicken earns its place at the center of the table, and when dinner's done, the carcass makes a pot of stock.

It's air-chilled, not water-chilled, which helps the skin crisp in the oven.

A small bird (3.0–3.7 lb) feeds three or four; go smaller for two, larger for a crowd.

Raised on our pasture in Meredith, New York, in shelters moved to fresh ground every day. They forage for grass, clover and bugs, and are fed organic grain grown and milled in New York. No antibiotics, ever.
