Chicken Sausage

Pasture-raised chicken sausage, made from a blend of light and dark meat. Links come in natural sheep casings; bulk ground skips the casing.

Brown links in a skillet over medium heat with a splash of water, or grill them. Use bulk ground for patties, pasta sauce, meatballs, or a pot of beans.

• Breakfast: mild and classic.

• Bratwurst: traditional and savory.

• Jalapeño Bratwurst: bratwurst with jalapeño and bell pepper.

• Andouille: Cajun-spiced.

Raised on our pasture in Meredith, New York, in shelters moved to fresh ground every day. They forage for grass, clover and bugs, and are fed organic grain grown and milled in New York. No antibiotics, ever.
